I have made this countless times, and have no idea where I got the original recipe. Toss the beef in the flour and fry in batches until browned all over. Deglaze the base of the pot with the white wine and return the beef to the pot. Whisk the floury onions into the beefy juices in the casserole, to make a thick onion gravy. Add the beef and carrots back to the casserole, or slice the beef and bring to the table on.
