Mix yogurt and sugar and whisk. Make sure the yogurt & chutney are chilled. Now take the raj kachori and poke on the top. Add all the ingredients in a bowl and mix together, check for seasoning.

  1. Boil and make the fish boneless. Mash it.
  2. In a deep based frying pan heat a bit of oil. Add kasauri met hi and fry till it smells.Then add chopped onion and ginger garlic paste and continue frying.
  3. As the masala starts smelling add fish alongwith ciba fish masala.
  4. Add coriander leaves, chopped green chillies to the mixture along with salt and sugar as per taste till it dries up as a filling.
  5. For the chutney first grind the whole garlic and the remaining chillies into a smooth paste
  6. Put half a small bowl of Cuba mint powder and mix up with water
  7. In a small Karzai heat a bit of oil.Add the garlic paste and then the paste of Cuba mint powder and allow to cook till colour changes
  8. Remove from the flame and allow to cool.Then mix up with curd and ciba chat Masala to make smooth chutney
  9. Knead a dough with Maida some oil salt and water.Make balls out of it.Roll out on a rolling board and add spoonful of fish filling
  10. Fold the sides circularly adding oil at the edges.
  11. Shape up in your palm into kachoris
  12. Deep fry the kachoris golden brown and serve hot with chutney
